Made in 2015 from the carefully collected wine lees from Springfield’s Sauvignon Blanc Life from Stone in 2015. and racked after three months' fermentation in a steel tank. This is followed by slow and careful distillation with our combined pot/column still.

Gradual dilution with water takes place over three to four months to bottling strength

Our Sauvignon Blanc Eau de Vie shows a fresh, floral bouquet, with impression of granadilla and citrus and displays the distinctly floral bouquet of the Life from Stone sauvignon blanc. It has also retained a measure of  the (fresh) yeasty notes of the lees.
