Made in 2015 from locally sourced (McGregor) Keisie peaches which were picked at optimal ripeness. The mashed fruit was fermented over a period of two to three weeks. Slow and careful double distillation was done with our combined pot/column still, followed by gradual dilution with water over a period of three to four months to bottling strength.
Our Peach Eau de Vie has a fragrant bouquet of ripe peach. It is fruity and fresh with a soft, dry finish.
